- Sea scallops - 6 large, patted dry

Steps
- In a small saucepan, heat the chicken broth and add the saffron threads. Keep it warm over low heat.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and cook until translucent, about 3 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the Arborio rice and cook for about 2 minutes, stirring frequently until the rice is lightly toasted.
- Pour in the white wine and cook, stirring, until it has mostly evaporated.
- Begin adding the warm saffron-infused chicken broth one ladle at a time, stirring often, and allowing the liquid to be absorbed before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Stir in the grated Parmesan cheese and unsalted butter, then season with salt and black pepper to taste. Remove from heat and cover.
- While the risotto is resting, heat a separate skillet over medium-high heat. Season the scallops with salt and pepper.
- Add a bit of olive oil to the hot skillet and sear the scallops for 2-3 minutes on each side until they are golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.
- To serve, spoon the saffron risotto onto plates, top with seared scallops, and garnish with chopped parsley.
