  • Sea scallops - 6 large, patted dry
  • Salt - to taste

Steps

  1. In a small saucepan, heat the chicken broth and add the saffron threads. Keep it warm over low heat.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and cook until translucent, about 3 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the Arborio rice and cook for about 2 minutes, stirring frequently until the rice is lightly toasted.
  5. Pour in the white wine and cook, stirring, until it has mostly evaporated.
  6. Begin adding the warm saffron-infused chicken broth one ladle at a time, stirring often, and allowing the liquid to be absorbed before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
  7. Stir in the grated Parmesan cheese and unsalted butter, then season with salt and black pepper to taste. Remove from heat and cover.
  8. While the risotto is resting, heat a separate skillet over medium-high heat. Season the scallops with salt and pepper.
  9. Add a bit of olive oil to the hot skillet and sear the scallops for 2-3 minutes on each side until they are golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.
  10. To serve, spoon the saffron risotto onto plates, top with seared scallops, and garnish with chopped parsley.
