- Arborio rice - 1 cup (200g)
- Low-sodium vegetable broth - 3 cups (720ml)
- Onion, finely chopped - 1 small (100g)
- Garlic, minced - 2 cloves
- Olive oil - 2 tablespoons (30ml)
- Saffron threads - 1/4 teaspoon
- Parmesan cheese, grated - 1/4 cup (25g)
- Fresh parsley, chopped - 2 tablespoons
- Black pepper - to taste
- Salt - to taste
- Lemon zest - 1 teaspoon
Steps
- In a small saucepan, heat the vegetable broth over low heat and add the saffron threads to infuse.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently, until the rice is slightly toasted.
- Begin adding the warmed saffron broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
- Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
- Serve immediately, garnished with additional parsley and a sprinkle of Parmesan cheese if desired.
