Ingredients

  • Arborio rice - 1 cup (200g)
  • Low-sodium vegetable broth - 3 cups (720ml)
  • Onion, finely chopped - 1 small (100g)
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons (30ml)
  • Saffron threads - 1/4 teaspoon
  • Parmesan cheese, grated - 1/4 cup (25g)
  • Fresh parsley, chopped - 2 tablespoons
  • Black pepper - to taste
  • Salt - to taste
  • Lemon zest - 1 teaspoon

Steps

  1. In a small saucepan, heat the vegetable broth over low heat and add the saffron threads to infuse.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the Arborio rice and cook for 2-3 minutes, stirring frequently, until the rice is slightly toasted.
  5. Begin adding the warmed saffron broth one ladle at a time, stirring frequently and allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  6. Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese, lemon zest, and chopped parsley. Season with salt and black pepper to taste.
  7. Serve immediately, garnished with additional parsley and a sprinkle of Parmesan cheese if desired.
