Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Saffron threads - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Almonds - 1/4 cup, sliced
  • Dried raisins - 1/4 cup
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a small bowl, steep the saffron threads in 2 tablespoons of warm water and set aside.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Stir in the soaked and drained rice, toasting it for 2-3 minutes while stirring frequently.
  6. Pour in the water, add the saffron mixture, and salt. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed.
  8. While the rice is cooking, toast the sliced almonds in a dry skillet over medium heat until golden brown, about 3-4 minutes, stirring frequently.
  9. Once the rice is done, fluff it with a fork and gently stir in the toasted almonds and dried raisins.
  10. Serve warm, garnished with chopped cilantro.
