- Water - 2 cups (480ml)
- Saffron threads - 1/4 teaspoon
- Olive oil - 1 tablespoon (15ml)
- Onion, finely chopped - 1/2 medium (50g)
- Garlic, minced - 2 cloves
- Salt - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
- Rinse the basmati rice under cold water until the water runs clear, then drain well.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, ground cumin, salt, and black pepper to the saucepan. Cook for an additional 1-2 minutes until fragrant.
- Stir in the rinsed basmati rice and sauté for another 2 minutes, ensuring the rice is well coated with the oil and spices.
- Pour in the water and the saffron mixture (including the saffron threads). Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes or until the rice is tender and the water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork and stir in the chopped parsley before serving.
