Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (480ml)
  • Saffron threads - 1/4 teaspoon
  • Olive oil - 1 tablespoon (15ml)
  • Onion, finely chopped - 1/2 medium (50g)
  • Garlic, minced - 2 cloves
  • Salt - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their color and flavor.
  2. Rinse the basmati rice under cold water until the water runs clear, then drain well.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic, ground cumin, salt, and black pepper to the saucepan. Cook for an additional 1-2 minutes until fragrant.
  5. Stir in the rinsed basmati rice and sauté for another 2 minutes, ensuring the rice is well coated with the oil and spices.
  6. Pour in the water and the saffron mixture (including the saffron threads). Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes or until the rice is tender and the water is absorbed.
  8. Remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork and stir in the chopped parsley before serving.
