Ingredients

  • Oats - 1 cup
  • Almond flour - 1/2 cup
  • Honey or maple syrup - 1/4 cup
  • Coconut oil - 2 tablespoons
  • Dark chocolate chips - 1/4 cup
  • Mini marshmallows - 1/2 cup
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine oats, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until well combined.
  3. Press the mixture evenly into the bottom of the prepared baking dish to form the base.
  4. Bake the base in the preheated oven for 10 minutes. Remove and let cool slightly.
  5. Sprinkle the dark chocolate chips evenly over the baked base, followed by the mini marshmallows.
  6. Return the baking dish to the oven and bake for another 10 minutes, until the marshmallows are puffed and golden.
  7. Remove from the oven and let cool for at least 10 minutes before cutting into bars.
