- Oats - 1 cup
- Almond flour - 1/2 cup
- Honey or maple syrup - 1/4 cup
- Coconut oil - 2 tablespoons
- Dark chocolate chips - 1/4 cup
- Mini marshmallows - 1/2 cup
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and line an 8x8 inch baking dish with parchment paper.
- In a mixing bowl, combine oats, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and salt. Mix until well combined.
- Press the mixture evenly into the bottom of the prepared baking dish to form the base.
- Bake the base in the preheated oven for 10 minutes. Remove and let cool slightly.
- Sprinkle the dark chocolate chips evenly over the baked base, followed by the mini marshmallows.
- Return the baking dish to the oven and bake for another 10 minutes, until the marshmallows are puffed and golden.
- Remove from the oven and let cool for at least 10 minutes before cutting into bars.
