Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 30 grams, melted
  • Maple syrup - 30 grams
  • Vanilla extract - 1 teaspoon
  • Baking soda - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Dark chocolate - 50 grams, chopped
  • Marshmallows - 6 pieces

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  5. Scoop out tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet and flatten slightly.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  7. Remove the cookies from the oven and let them cool for a few minutes on the baking sheet.
  8. Once slightly cooled, place a piece of dark chocolate and a marshmallow on top of half of the cookies.
  9. Return the baking sheet to the oven and bake for an additional 3-5 minutes, until the marshmallows are puffed and slightly toasted.
  10. Remove from the oven and top with the remaining cookies to create sandwiches. Allow to cool slightly before serving.
