Ingredients

  • all-purpose flour - 125 grams
  • unsalted butter - 113 grams, softened
  • cream cheese - 113 grams, softened
  • granulated sugar - 30 grams
  • vanilla extract - 5 ml
  • salt - 1 gram
  • ground cinnamon - 2 grams
  • chopped walnuts - 30 grams
  • raspberry preserves - 60 grams
  • egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the all-purpose flour, softened butter, cream cheese, granulated sugar, vanilla extract, and salt. Mix until a smooth dough forms.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
  3. Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.
  4. On a floured surface, roll out the chilled dough into a 30 cm (12-inch) circle. Spread the raspberry preserves evenly over the dough.
  5. In a small bowl, mix the chopped walnuts and ground cinnamon, then sprinkle this mixture evenly over the raspberry preserves.
  6. Using a pizza cutter or sharp knife, slice the dough into 8 equal wedges. Starting from the wide end, roll each wedge towards the point, forming a crescent shape.
  7. Place the rolled rugelach on the prepared baking sheet and brush the tops with the beaten egg.
  8. Bake for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
