- Mushrooms, sliced - 100 grams
- Beef broth (gluten-free) - 500 milliliters
- Tomato paste - 2 tablespoons
- Thyme, dried - 1 teaspoon
- Rosemary, dried - 1 teaspoon
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 250 milliliters
- Fresh parsley, chopped - for garnish
Steps
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Increase the heat to medium-high and add the cubed elk meat. Sear until browned on all sides, about 5-7 minutes.
- Add the sliced carrots, diced celery, diced potato, and sliced mushrooms to the pot. Stir well to combine.
- Pour in the beef broth and water. Stir in the tomato paste, thyme, rosemary, bay leaf, salt, and black pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and let simmer for 60 minutes, stirring occasionally.
- After 60 minutes, check the seasoning and adjust if necessary. Remove the bay leaf before serving.
- Serve hot, garnished with fresh chopped parsley.
