- Cayenne pepper - 1/2 teaspoon
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Apple cider vinegar - 2 tablespoons
- Honey - 1 tablespoon
Steps
- In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, cayenne pepper, sea salt, black pepper, apple cider vinegar, and honey to create a marinade.
- Place the wild boar shoulder in a resealable plastic bag or a shallow dish, pour the marinade over it, and ensure it's well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, ideally overnight.
- Preheat the oven to 160°C (320°F). Remove the wild boar from the marinade and let it come to room temperature for about 30 minutes.
- Place the marinated wild boar in a roasting pan and cover it tightly with aluminum foil. Roast in the preheated oven for 1.5 hours.
- After 1.5 hours, remove the foil and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes to achieve a crispy exterior.
- Remove from the oven, let rest for 10 minutes, then slice and serve.
