Ingredients

  • Wild boar shoulder - 500 grams
  • Olive oil - 2 tablespoons

  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Smoked paprika - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Apple cider vinegar - 2 tablespoons
  • Honey - 1 tablespoon

Steps

  1. In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, cayenne pepper, sea salt, black pepper, apple cider vinegar, and honey to create a marinade.
  2. Place the wild boar shoulder in a resealable plastic bag or a shallow dish, pour the marinade over it, and ensure it's well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, ideally overnight.
  3. Preheat the oven to 160°C (320°F). Remove the wild boar from the marinade and let it come to room temperature for about 30 minutes.
  4. Place the marinated wild boar in a roasting pan and cover it tightly with aluminum foil. Roast in the preheated oven for 1.5 hours.
  5. After 1.5 hours, remove the foil and increase the oven temperature to 220°C (425°F). Roast for an additional 30 minutes to achieve a crispy exterior.
  6. Remove from the oven, let rest for 10 minutes, then slice and serve.
