- Arborio rice - 150 g
- Vegetable broth - 500 ml
- Olive oil - 2 tbsp
- Garlic, minced - 2 cloves
- Onion, finely chopped - 1 small
- Carrot, diced - 1 medium
- Zucchini, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Cherry tomatoes, halved - 100 g
- Parmesan cheese, grated - 30 g
- Fresh basil, chopped - 2 tbsp
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- On a baking sheet, toss the diced carrot, zucchini, red bell pepper, and halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Roast in the preheated oven for 20 minutes until tender and slightly caramelized.
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and Arborio rice, cooking for an additional 2 minutes until the rice is lightly toasted.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb the broth before adding more. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
- Once the rice is cooked, stir in the roasted vegetables, grated Parmesan cheese, and chopped basil. Season with salt and pepper to taste.
- Remove from heat and let it sit for a couple of minutes before serving.
