Ingredients

  • Water - 2 cups (480ml)
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Red onion - 1 small, chopped
  • Olive oil - 2 tablespoons (30ml)
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the quinoa under cold water and drain.
  3. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until all the water is absorbed.
  4. While the quinoa is cooking, prepare the vegetables. In a large bowl, combine the diced zucchini, red bell pepper, carrot, and red onion.
  5. Drizzle the olive oil over the vegetables, and sprinkle with garlic powder, paprika, salt, and black pepper. Toss to coat evenly.
