Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, sliced
- Red onion - 1/2 medium, chopped
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 100 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Rinse the quinoa under cold water and then combine it with 2 cups of water in a saucepan. Bring it to a boil, reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
- While the quinoa is cooking, prepare the vegetables. In a large bowl, combine the diced zucchini, red bell pepper, sliced carrot, and chopped red onion.
- Drizzle the vegetables with olive oil, and sprinkle with garlic powder, dried oregano, salt, and black pepper. Toss to coat evenly.
- Spread the vegetables on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until they are tender and slightly caramelized.
- Once the quinoa is cooked, fluff it with a fork and transfer it to a large serving bowl.
- Add the roasted vegetables to the quinoa and mix gently.
- Stir in the crumbled feta cheese, chopped parsley, and lemon juice. Adjust seasoning if necessary.
- Serve warm or at room temperature.
