  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 medium, sliced
  • Red onion - 1/2 medium, chopped

  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon

  • Feta cheese - 100 grams, crumbled

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the quinoa under cold water and then combine it with 2 cups of water in a saucepan. Bring it to a boil, reduce the heat, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed.
