Ingredients

  • Zucchini - 1 medium, sliced
  • Bell pepper (any color) - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Red onion - 1/2 medium, sliced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Whole wheat tortillas - 2 large
  • Hummus - 100 grams
  • Fresh spinach - 1 cup

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the sliced zucchini, bell pepper, carrot, and red onion.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
  5. While the vegetables are roasting, prepare the wraps by spreading 50 grams of hummus on each tortilla.
  6. Once the vegetables are done, let them cool slightly before distributing them evenly over the hummus on each tortilla.
  7. Top the roasted vegetables with fresh spinach, then roll the tortillas tightly to form wraps.
  8. Slice the wraps in half and serve immediately, or wrap them in foil for an on-the-go meal.
