- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Red onion - 1 small, diced
- Chickpeas - 1 can (400g), drained and rinsed
- Green lentils - 100g, rinsed
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine diced carrot, red bell pepper, zucchini, red onion, chickpeas, olive oil, garlic, cumin, paprika, salt, and black pepper. Toss until the vegetables and chickpeas are well-coated.
- Spread the mixture evenly on a baking sheet and roast in the oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
- While the vegetables are roasting, cook the lentils. In a pot, add the rinsed lentils and cover with water (about 250ml). Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender. Drain any excess water.
- Once the roasted vegetables and chickpeas are done, remove them from the oven and let them cool slightly.
- In a large serving bowl, combine the roasted vegetables, chickpeas, cooked lentils, fresh parsley, and lemon juice. Toss gently to combine.
- Serve immediately or refrigerate for up to 2 days for a chilled salad.
