  • Garlic - 2 cloves, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese - 100 grams, shredded
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, toss the sliced red bell pepper, zucchini, red onion, cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and black pepper until well combined.
  3. Spread the vegetables evenly on a baking sheet and roast in the preheated oven for about 15 minutes, or until they are tender and slightly caramelized.
