- Basil - 10 grams, fresh

- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the tomatoes in half and place them cut-side up on a baking sheet.
- Drizzle with 1 tablespoon of olive oil, and sprinkle with salt, pepper, and red pepper flakes if using.
- Roast the tomatoes in the oven for 25-30 minutes until they are caramelized and tender.
- In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Remove the roasted tomatoes from the oven and add them to the pot along with the vegetable broth, dried oregano, and balsamic vinegar.
- Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld.
- Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender and blend in batches.
- Stir in the fresh basil and adjust seasoning if necessary.
- Serve hot, garnished with additional basil if desired.
