Ingredients

  • Cherry tomatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Fresh basil leaves - 10 grams
  • Balsamic vinegar - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Freshly ground black pepper - to taste
  • Whole grain baguette - 1 small (about 150 grams)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cherry tomatoes in half and place them in a bowl.
  3. Add olive oil, minced garlic, salt, and black pepper to the tomatoes. Toss well to coat.
  4. Spread the tomatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are soft and slightly caramelized.
  6. While the tomatoes are roasting, slice the whole grain baguette into 1.5 cm thick slices.
  7. Arrange the bread slices on another baking sheet and drizzle with a little olive oil.
  8. Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.
  9. Once the tomatoes are done, remove them from the oven and let them cool slightly.
  10. Chop the fresh basil leaves and mix them with the roasted tomatoes and balsamic vinegar.
  11. Top each toasted slice of baguette with a generous spoonful of the roasted tomato mixture.
