- Cherry tomatoes - 300 grams
- Olive oil - 2 tablespoons
- Fresh basil leaves - 10 grams
- Balsamic vinegar - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Freshly ground black pepper - to taste
- Whole grain baguette - 1 small (about 150 grams)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cherry tomatoes in half and place them in a bowl.
- Add olive oil, minced garlic, salt, and black pepper to the tomatoes. Toss well to coat.
- Spread the tomatoes in a single layer on a baking sheet lined with parchment paper.
- Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are soft and slightly caramelized.
- While the tomatoes are roasting, slice the whole grain baguette into 1.5 cm thick slices.
- Arrange the bread slices on another baking sheet and drizzle with a little olive oil.
- Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.
- Once the tomatoes are done, remove them from the oven and let them cool slightly.
- Chop the fresh basil leaves and mix them with the roasted tomatoes and balsamic vinegar.
