- Fresh tomatoes - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Vegetable broth - 500 ml
- Fresh basil leaves - 10 grams, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Balsamic vinegar - 1 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Cut the fresh tomatoes in half and place them on a baking sheet.
- Drizzle the tomatoes with 1 tablespoon of olive oil and sprinkle with salt and pepper.
- Roast the tomatoes in the oven for 25-30 minutes until they are caramelized and soft.
- While the tomatoes are roasting, heat the remaining tablespoon of olive oil in a pot over medium heat.
- Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 5 minutes.
- Once the tomatoes are done roasting, add them to the pot along with the vegetable broth and balsamic vinegar.
- Bring the mixture to a simmer and let it cook for an additional 10 minutes, allowing the flavors to meld.
- Remove from heat and stir in the chopped basil.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a blender in batches.
- Serve hot, garnished with a few fresh basil leaves if desired.
