Ingredients

  • Fresh tomatoes - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Vegetable broth - 500 ml
  • Fresh basil leaves - 10 grams, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the fresh tomatoes in half and place them on a baking sheet.
  3. Drizzle the tomatoes with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  4. Roast the tomatoes in the oven for 25-30 minutes until they are caramelized and soft.
  5. While the tomatoes are roasting, heat the remaining tablespoon of olive oil in a pot over medium heat.
  6. Add the diced onion and minced garlic to the pot, sautéing until the onion is translucent, about 5 minutes.
  7. Once the tomatoes are done roasting, add them to the pot along with the vegetable broth and balsamic vinegar.
  8. Bring the mixture to a simmer and let it cook for an additional 10 minutes, allowing the flavors to meld.
  9. Remove from heat and stir in the chopped basil.
  10. Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a blender in batches.
  11. Serve hot, garnished with a few fresh basil leaves if desired.
