Ingredients

  • Cherry tomatoes - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pasta (whole wheat or gluten-free) - 160 grams
  • Fresh basil leaves - 1/2 cup, chopped
  • Parmesan cheese - 30 grams, grated
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a baking dish, combine cherry tomatoes, olive oil, minced garlic, salt, and black pepper. Toss well to coat the tomatoes.
  3. Roast the tomatoes in the oven for 20 minutes, or until they are soft and caramelized.
  4. While the tomatoes are roasting, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  5. Reserve 1/2 cup of pasta water, then drain the pasta.
  6. Once the tomatoes are done, remove them from the oven and add the roasted mixture to the drained pasta.
  7. Add chopped basil, grated Parmesan cheese, and reserved pasta water a little at a time until you reach your desired consistency.
  8. Toss everything together and serve hot, garnished with additional basil and red pepper flakes if desired.
