- Cherry tomatoes - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pasta (whole wheat or gluten-free) - 160 grams
- Fresh basil leaves - 1/2 cup, chopped
- Parmesan cheese - 30 grams, grated
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, combine cherry tomatoes, olive oil, minced garlic, salt, and black pepper. Toss well to coat the tomatoes.
- Roast the tomatoes in the oven for 20 minutes, or until they are soft and caramelized.
- While the tomatoes are roasting, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta.
- Once the tomatoes are done, remove them from the oven and add the roasted mixture to the drained pasta.
- Add chopped basil, grated Parmesan cheese, and reserved pasta water a little at a time until you reach your desired consistency.
- Toss everything together and serve hot, garnished with additional basil and red pepper flakes if desired.
