- Fresh basil leaves - 1 cup, roughly chopped
- Pasta (whole wheat or gluten-free) - 150 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
- Red pepper flakes - 1/4 teaspoon (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a baking dish, combine cherry tomatoes, 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Toss to coat.
- Roast the tomatoes in the preheated oven for 15-20 minutes, or until they are soft and slightly caramelized.
- While the tomatoes are roasting, bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large mixing bowl, combine the roasted tomatoes (with any juices), cooked pasta, remaining tablespoon of olive oil, and chopped basil. Toss everything together, adding reserved pasta water as needed to achieve desired consistency.
