- Sweet potato - 300 grams, diced
- Quinoa - 100 grams, rinsed
- Chickpeas - 1 can (400 grams), drained and rinsed
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red onion - 1 small, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the diced sweet potatoes with 1 tablespoon of olive oil, cumin, paprika, salt, and black pepper. Toss until well coated.
- Spread the sweet potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, bring 400 ml of water to a boil in a saucepan. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and the water is absorbed.
- In a large bowl, combine the cooked quinoa, roasted sweet potatoes, chickpeas, diced red onion, and chopped parsley.
- Drizzle the remaining tablespoon of olive oil and lemon juice over the salad. Toss gently to combine.
- If desired, sprinkle crumbled feta cheese on top before serving.
