  • Dried lentils (green or brown) - 150 grams, rinsed
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, cumin, paprika, salt, and black pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.
