- Cooked lentils - 1 cup (about 200 grams)
- Chickpeas - 1 cup (canned, drained and rinsed)
- Fresh spinach - 150 grams
- Garlic - 2 cloves, minced
- Vegetable broth - 1/2 cup
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, black pepper, and cumin.
- Spread the sweet potatoes in a single layer on a baking sheet and roast for 25-30 minutes, or until golden and tender, stirring halfway through.
- While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant, then add the cooked lentils and chickpeas.
- Pour in the vegetable broth and cook for 5-7 minutes, stirring occasionally until heated through.
