Ingredients

  • Sweet potato - 200 grams, cubed
  • Cooked green lentils - 150 grams
  • Chickpeas - 100 grams, drained and rinsed
  • Fresh spinach - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Water - 200 ml

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, toss the cubed sweet potato with 1 tablespoon of olive oil, cumin, paprika, salt, and black pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast in the oven for 20 minutes, or until tender and slightly caramelized.
  4. Meanwhile, in a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the cooked lentils and chickpeas to the skillet, stirring to combine. Cook for 5 minutes, allowing the flavors to meld.
  6. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  7. Once the sweet potatoes are done roasting, combine them with the lentil and spinach mixture in the skillet.
