Ingredients

  • Sweet potato - 300 grams, diced
  • Cooked lentils - 1 cup (240 ml)
  • Chickpeas - 1 cup (240 ml), canned and drained
  • Fresh spinach - 2 cups (60 grams), packed
  • Olive oil - 2 tablespoons (30 ml)
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon (5 grams)
  • Paprika - 1 teaspoon (5 grams)
  • Salt - 1/2 teaspoon (3 grams)
  • Black pepper - 1/4 teaspoon (1 gram)
  • Lemon juice - 1 tablespoon (15 ml)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, toss the diced sweet potato with 1 tablespoon of olive oil, cumin, paprika, salt, and black pepper.
  3. Spread the seasoned sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  4. While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  5. Add the minced garlic and sauté for 1 minute until fragrant.
  6. Stir in the cooked lentils and chickpeas, and cook for an additional 5 minutes, allowing the mixture to heat through.
  7. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  8. Remove the sweet potatoes from the oven and combine them with the lentil, chickpea, and spinach mixture.
  9. Drizzle with lemon juice, toss to combine, and serve warm.
