Ingredients

  • Sweet potatoes - 2 medium (about 400 grams)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Lentils (green or brown) - 1 cup (200 grams), rinsed
  • Vegetable broth or water - 2 cups (500 ml)
  • Spinach - 2 cups (60 grams), fresh
  • Canned chickpeas - 1 cup (240 grams), drained and rinsed
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes into 1-inch cubes and place them on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil, and season with salt, black pepper, and dried thyme. Toss to coat.
  4. Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until they are tender and lightly browned, flipping halfway through.
  5. In a medium saucepan, combine the rinsed lentils and vegetable broth (or water). Bring to a boil, then reduce heat to a simmer and cook uncovered for about 20 minutes, or until the lentils are tender.
  6. In the last 5 minutes of cooking the lentils, add the spinach, minced garlic, chickpeas, cumin, and paprika. Stir until the spinach wilts and everything is heated through.
  7. Remove the saucepan from heat and stir in the lemon juice.
  8. To serve, divide the lentil and spinach mixture into bowls and top with the roasted sweet potatoes.
