Ingredients

  • Sweet potatoes - 400 grams
  • Lentils (green or brown) - 150 grams
  • Chickpeas (cooked or canned) - 200 grams
  • Fresh spinach - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth or water - 500 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley (chopped) - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes into bite-sized pieces and place them on a baking sheet.
  3. Drizzle the sweet potatoes with 1 tablespoon of olive oil, and sprinkle with salt, pepper, cumin, and paprika. Toss to coat evenly.
  4. Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
  5. While the sweet potatoes are roasting, rinse the lentils under cold water and drain.
  6. In a medium saucepan, combine the lentils and vegetable broth (or water). Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until lentils are tender but not mushy.
  7. Add the minced garlic and chickpeas to the lentils during the last 5 minutes of cooking, stirring well.
  8. Once the lentils are cooked, add the fresh spinach and lemon juice, stirring until the spinach wilts down.
  9. Serve the roasted sweet potatoes on top of the lentil mixture and garnish with chopped parsley.
