Ingredients
- Sweet potatoes - 400 grams
- Lentils (green or brown) - 150 grams
- Chickpeas (cooked or canned) - 200 grams
- Fresh spinach - 100 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth or water - 500 ml
- Lemon juice - 1 tablespoon
- Fresh parsley (chopped) - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Peel and cube the sweet potatoes into bite-sized pieces and place them on a baking sheet.
- Drizzle the sweet potatoes with 1 tablespoon of olive oil, and sprinkle with salt, pepper, cumin, and paprika. Toss to coat evenly.
- Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
- While the sweet potatoes are roasting, rinse the lentils under cold water and drain.
- In a medium saucepan, combine the lentils and vegetable broth (or water). Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until lentils are tender but not mushy.
- Add the minced garlic and chickpeas to the lentils during the last 5 minutes of cooking, stirring well.
- Once the lentils are cooked, add the fresh spinach and lemon juice, stirring until the spinach wilts down.
- Serve the roasted sweet potatoes on top of the lentil mixture and garnish with chopped parsley.
