  • Cooked Green Lentils - 200 grams
  • Canned Chickpeas - 200 grams, drained and rinsed
  • Olive Oil - 2 tablespoons
  • Ground Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic Powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Fresh Spinach - 100 grams, chopped
  • Lemon Juice - 1 tablespoon
  • Feta Cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, cumin, paprika, garlic powder, salt, and black pepper until well coated.
  3. Spread the seasoned sweet potatoes on a baking sheet in a single layer and roast in the oven for 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. Meanwhile, in a skillet over medium heat, add the remaining tablespoon of olive oil and the drained chickpeas. Sprinkle with a bit of salt and cook for about 5-7 minutes, stirring occasionally, until they are crispy and golden.
  5. Once the sweet potatoes are done, remove them from the oven and combine them in a large bowl with the cooked lentils, crispy chickpeas, and chopped spinach.
  6. Drizzle with lemon juice, toss gently to combine, and serve warm, topped with crumbled feta cheese if desired.
