Ingredients

  • Fresh lemons - 2 (1 for juice, 1 sliced)
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Fresh rosemary - 2 sprigs, leaves chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Honey - 1 teaspoon
  • Chicken broth - 1/4 cup

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the olive oil, minced garlic, lemon juice, chopped rosemary, salt, black pepper, and honey to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. In a roasting pan, place the marinated chicken thighs skin-side up. Arrange lemon slices around the chicken.
  5. Pour chicken broth into the bottom of the roasting pan to keep the chicken moist during cooking.
