- Garlic - 1 head
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Potato - 1 medium, peeled and diced
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Heavy cream - 2 tablespoons (optional for creaminess)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Slice the top off the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft and caramelized.
- In a pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Add the diced potato, dried thyme, salt, and black pepper to the pot. Pour in the vegetable broth and bring to a boil.
- Reduce the heat and simmer for 10-15 minutes, until the potatoes are tender.
- Once the garlic is roasted, squeeze the softened cloves into the soup mixture. Stir well and simmer for another 5 minutes.
- Use an immersion blender or transfer the soup to a blender and puree until smooth. If using, stir in the heavy cream for added richness.
- Serve hot, garnished with fresh parsley.
