- Potatoes (Yukon Gold or Red) - 400 grams
- Garlic - 6 cloves
- Olive oil - 2 tablespoons
- Fresh rosemary - 1 teaspoon, chopped
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Wash and scrub the potatoes, then cut them into bite-sized pieces (about 2.5 cm).
- Peel the garlic cloves and place them whole in a small piece of aluminum foil. Drizzle with 1 teaspoon of olive oil, wrap them up, and set aside.
- In a large bowl, combine the potato pieces, remaining olive oil, chopped rosemary, chopped thyme, salt, and black pepper. Toss until the potatoes are well coated.
- Spread the seasoned potatoes out evenly on a baking sheet.
- Place the wrapped garlic on the baking sheet alongside the potatoes.
- Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
- Remove the garlic from the oven, unwrap, and mash the roasted garlic cloves in a small bowl.
- Once the potatoes are done, toss them with the mashed garlic for an extra burst of flavor before serving.
