Ingredients

  • Potatoes (Yukon Gold or Red) - 400 grams
  • Garlic - 6 cloves
  • Olive oil - 2 tablespoons
  • Fresh rosemary - 1 teaspoon, chopped
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and scrub the potatoes, then cut them into bite-sized pieces (about 2.5 cm).
  3. Peel the garlic cloves and place them whole in a small piece of aluminum foil. Drizzle with 1 teaspoon of olive oil, wrap them up, and set aside.
  4. In a large bowl, combine the potato pieces, remaining olive oil, chopped rosemary, chopped thyme, salt, and black pepper. Toss until the potatoes are well coated.
  5. Spread the seasoned potatoes out evenly on a baking sheet.
  6. Place the wrapped garlic on the baking sheet alongside the potatoes.
  7. Roast in the preheated oven for 30-35 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through.
  8. Remove the garlic from the oven, unwrap, and mash the roasted garlic cloves in a small bowl.
  9. Once the potatoes are done, toss them with the mashed garlic for an extra burst of flavor before serving.
