Ingredients

  • Yukon Gold potatoes - 450 grams
  • Garlic cloves - 4 large
  • Unsalted butter - 30 grams
  • Whole milk - 60 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the top off the garlic bulb to expose the cloves and drizzle with olive oil. Wrap it in aluminum foil and roast in the oven for 30 minutes.
  3. While the garlic is roasting, peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil.
  4. Once the water is boiling, reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  5. Remove the roasted garlic from the oven and let it cool slightly. Squeeze the garlic cloves out of their skins into a bowl.
  6. Drain the potatoes and return them to the pot. Add the roasted garlic, butter, and milk to the potatoes.
  7. Mash the potatoes until smooth and creamy, adding more milk if necessary to reach your desired consistency. Season with salt and black pepper to taste.
  8. Serve warm, garnished with chopped parsley if desired.
