Ingredients
- Yukon Gold potatoes - 450 grams
- Garlic cloves - 4 large
- Unsalted butter - 30 grams
- Whole milk - 60 ml
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped (optional)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the top off the garlic bulb to expose the cloves and drizzle with olive oil. Wrap it in aluminum foil and roast in the oven for 30 minutes.
- While the garlic is roasting, peel and chop the Yukon Gold potatoes into even chunks. Place them in a pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil.
- Once the water is boiling, reduce the heat and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
- Remove the roasted garlic from the oven and let it cool slightly. Squeeze the garlic cloves out of their skins into a bowl.
- Drain the potatoes and return them to the pot. Add the roasted garlic, butter, and milk to the potatoes.
- Mash the potatoes until smooth and creamy, adding more milk if necessary to reach your desired consistency. Season with salt and black pepper to taste.
- Serve warm, garnished with chopped parsley if desired.
