Ingredients
- Cauliflower - 1 medium head (about 600g)
- Garlic - 1 whole bulb
- Olive oil - 2 tablespoons
- Unsalted butter - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Milk (or plant-based milk) - 1/4 cup
- Chives (optional) - 2 tablespoons, chopped
Steps
- Preheat your oven to 200°C (400°F).
- Cut the top off the whole bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap it in aluminum foil, and place it in the oven. Roast for 30-35 minutes until soft and caramelized.
- While the garlic is roasting, bring a large pot of salted water to a boil. Cut the cauliflower into florets and add them to the boiling water. Cook for 10-12 minutes until tender.
- Once the cauliflower is cooked, drain it and return it to the pot. Squeeze the roasted garlic cloves out of their skins into the pot with the cauliflower.
- Add the remaining tablespoon of olive oil, butter, salt, black pepper, and milk to the pot. Use a potato masher or immersion blender to mash and combine until smooth and creamy.
- Taste and adjust seasoning if needed. Serve hot, garnished with chopped chives if desired.
