- Garlic - 1 whole bulb
- Olive oil - 2 tablespoons
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Tahini - 2 tablespoons (30g)
- Lemon juice - 2 tablespoons (30ml)
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Water - 2 tablespoons (30ml)
- Paprika - for garnish (optional)
- Fresh parsley - for garnish (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the top off the bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil.
- Roast the garlic in the preheated oven for 30-35 minutes until soft and caramelized.
- While the garlic is roasting, prepare the hummus: In a food processor, combine the chickpeas, tahini, lemon juice, ground cumin, salt, and 2 tablespoons of water.
- Once the garlic is roasted, squeeze the softened cloves into the food processor with the other ingredients.
- Process until smooth, adding more water if needed to reach your desired consistency.
- Taste and adjust seasoning if necessary.
- Transfer the hummus to a serving bowl, drizzle with remaining olive oil, and sprinkle with paprika and chopped parsley, if desired.
