Ingredients

  • Garlic - 1 whole bulb
  • Olive oil - 2 tablespoons
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Tahini - 2 tablespoons (30g)
  • Lemon juice - 2 tablespoons (30ml)
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 2 tablespoons (30ml)
  • Paprika - for garnish (optional)
  • Fresh parsley - for garnish (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the top off the bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil.
  3. Roast the garlic in the preheated oven for 30-35 minutes until soft and caramelized.
  4. While the garlic is roasting, prepare the hummus: In a food processor, combine the chickpeas, tahini, lemon juice, ground cumin, salt, and 2 tablespoons of water.
  5. Once the garlic is roasted, squeeze the softened cloves into the food processor with the other ingredients.
  6. Process until smooth, adding more water if needed to reach your desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Transfer the hummus to a serving bowl, drizzle with remaining olive oil, and sprinkle with paprika and chopped parsley, if desired.
