- Chicken thighs - 500 grams
- Garlic - 1 whole bulb
- Olive oil - 2 tablespoons
- Dried thyme - 1 teaspoon
- Dried rosemary - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Slice the top off the whole bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 30 minutes.
- While the garlic is roasting, season the chicken thighs with salt, pepper, thyme, rosemary, and lemon juice.
- In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat.
- Sear the chicken thighs for about 4-5 minutes on each side until golden brown.
- Once the garlic is roasted, squeeze the softened cloves out of the bulb and mash them into a paste.
- Spread the roasted garlic paste over the seared chicken thighs in the skillet.
- Transfer the skillet to the oven and bake for an additional 10-15 minutes until the chicken is cooked through (internal temperature of 75°C/165°F).
- Remove from the oven, let rest for a few minutes, then garnish with fresh parsley before serving.
