Ingredients

  • Chicken thighs - 500 grams
  • Garlic - 1 whole bulb
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Dried rosemary - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the top off the whole bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 30 minutes.
  3. While the garlic is roasting, season the chicken thighs with salt, pepper, thyme, rosemary, and lemon juice.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat.
  5. Sear the chicken thighs for about 4-5 minutes on each side until golden brown.
  6. Once the garlic is roasted, squeeze the softened cloves out of the bulb and mash them into a paste.
  7. Spread the roasted garlic paste over the seared chicken thighs in the skillet.
  8. Transfer the skillet to the oven and bake for an additional 10-15 minutes until the chicken is cooked through (internal temperature of 75°C/165°F).
  9. Remove from the oven, let rest for a few minutes, then garnish with fresh parsley before serving.
