- Cauliflower - 1 medium head (about 500g)
- Garlic - 6 cloves
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves and stem from the cauliflower, and cut it into florets.
- Peel the garlic cloves and place them on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap the foil tightly to create a packet.
- In a large bowl, toss the cauliflower florets with the remaining 1 tablespoon of olive oil, salt, and black pepper until evenly coated.
- Spread the cauliflower florets on a baking sheet in a single layer.
- Place the garlic packet on the baking sheet with the cauliflower.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
- Once done, carefully unwrap the garlic packet and mash the roasted garlic with a fork.
- In a mixing bowl, combine the mashed garlic with the roasted cauliflower and toss well.
- Serve hot, garnished with fresh chopped parsley.
