Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Garlic - 6 cloves
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves and stem from the cauliflower, and cut it into florets.
  3. Peel the garlic cloves and place them on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap the foil tightly to create a packet.
  4. In a large bowl, toss the cauliflower florets with the remaining 1 tablespoon of olive oil, salt, and black pepper until evenly coated.
  5. Spread the cauliflower florets on a baking sheet in a single layer.
  6. Place the garlic packet on the baking sheet with the cauliflower.
  7. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through.
  8. Once done, carefully unwrap the garlic packet and mash the roasted garlic with a fork.
  9. In a mixing bowl, combine the mashed garlic with the roasted cauliflower and toss well.
  10. Serve hot, garnished with fresh chopped parsley.
