Ingredients

  • French baguette - 1 small (about 250g)
  • Garlic - 1 whole bulb
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 200g, halved
  • Fresh basil - 10g, chopped
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the top off the whole bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 20-25 minutes until soft and golden.
  3. While the garlic is roasting, slice the baguette into 1.5 cm thick slices and arrange on a baking sheet.
  4. Brush the baguette slices with the remaining tablespoon of olive oil and toast in the oven for 5-7 minutes until golden and crispy.
  5. In a mixing bowl, combine the halved cherry tomatoes, chopped basil, balsamic vinegar, salt, and black pepper. Mix well.
  6. Once the garlic is done roasting, allow it to cool slightly, then squeeze the softened cloves out of their skins into a small bowl and mash with a fork.
  7. Spread the roasted garlic evenly onto the toasted baguette slices.
  8. Top each slice with the tomato-basil mixture and serve immediately.
