- French baguette - 1 small (about 250g)
- Garlic - 1 whole bulb
- Olive oil - 2 tablespoons
- Cherry tomatoes - 200g, halved
- Fresh basil - 10g, chopped
- Balsamic vinegar - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Slice the top off the whole bulb of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for 20-25 minutes until soft and golden.
- While the garlic is roasting, slice the baguette into 1.5 cm thick slices and arrange on a baking sheet.
- Brush the baguette slices with the remaining tablespoon of olive oil and toast in the oven for 5-7 minutes until golden and crispy.
- In a mixing bowl, combine the halved cherry tomatoes, chopped basil, balsamic vinegar, salt, and black pepper. Mix well.
- Once the garlic is done roasting, allow it to cool slightly, then squeeze the softened cloves out of their skins into a small bowl and mash with a fork.
- Spread the roasted garlic evenly onto the toasted baguette slices.
- Top each slice with the tomato-basil mixture and serve immediately.
