- Quinoa - 1 cup (170g)
- Garlic - 6 cloves
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups (480ml)
- Fresh parsley - 2 tablespoons, chopped
- Fresh thyme - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Wrap the garlic cloves in aluminum foil and drizzle with 1 tablespoon of olive oil. Seal the foil and place it in the oven to roast for 25 minutes.
- Meanwhile, rinse the quinoa under cold water in a fine-mesh sieve.
- In a medium saucepan, combine the rinsed quinoa and vegetable broth. Add salt and black pepper. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
- Remove the roasted garlic from the oven and let it cool slightly. Squeeze the garlic cloves out of their skins into a small bowl and mash them with a fork.
- Once the quinoa is cooked, fluff it with a fork and stir in the mashed garlic, remaining olive oil, chopped parsley, and thyme.
- Serve warm, garnished with extra herbs if desired.
