Ingredients

  • Quinoa - 1 cup (170g)
  • Garlic - 6 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 2 cups (480ml)
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wrap the garlic cloves in aluminum foil and drizzle with 1 tablespoon of olive oil. Seal the foil and place it in the oven to roast for 25 minutes.
  3. Meanwhile, rinse the quinoa under cold water in a fine-mesh sieve.
  4. In a medium saucepan, combine the rinsed quinoa and vegetable broth. Add salt and black pepper. Bring to a boil over medium-high heat.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  6. Remove the roasted garlic from the oven and let it cool slightly. Squeeze the garlic cloves out of their skins into a small bowl and mash them with a fork.
  7. Once the quinoa is cooked, fluff it with a fork and stir in the mashed garlic, remaining olive oil, chopped parsley, and thyme.
  8. Serve warm, garnished with extra herbs if desired.
