- Olive oil - 2 tablespoons (30ml)
- Garlic - 6 cloves, peeled
- Fresh rosemary - 1 tablespoon, chopped
- Fresh thyme - 1 tablespoon, chopped
- Lemon - 1, zested and juiced
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Vegetable broth - 100ml
Steps
- Preheat your oven to 200°C (400°F).
- In a small bowl, mix together olive oil, lemon juice, lemon zest, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
- Place the chicken thighs in a dish, and pour the marinade over them, ensuring they are well coated. Add the peeled garlic cloves to the dish as well.
- Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).
- Transfer the marinated chicken and garlic to a baking dish. Pour the vegetable broth around the chicken.
- Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and is golden brown.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
