Ingredients

  • Chicken thighs - 2 pieces (approx. 300g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 6 cloves, peeled
  • Fresh rosemary - 1 tablespoon, chopped
  • Fresh thyme - 1 tablespoon, chopped
  • Lemon - 1, zested and juiced
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Vegetable broth - 100ml

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix together olive oil, lemon juice, lemon zest, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
  3. Place the chicken thighs in a dish, and pour the marinade over them, ensuring they are well coated. Add the peeled garlic cloves to the dish as well.
  4. Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).
  5. Transfer the marinated chicken and garlic to a baking dish. Pour the vegetable broth around the chicken.
  6. Roast in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 75°C (165°F) and is golden brown.
  7. Remove the chicken from the oven and let it rest for 5 minutes before serving.
