  • 1 whole chicken (about 1.2 kg)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 lemon, halved
  • 1 cup chicken broth (low sodium)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. In a small bowl, mix the olive oil, salt, black pepper, rosemary, thyme, and minced garlic to create a herb paste.
