  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, chopped
  • Red onion - 1 medium, sliced
  • Cherry tomatoes - 200 grams, halved
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Shredded mozzarella cheese - 100 grams
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the chicken thighs, minced garlic, olive oil, oregano, thyme, salt, and black pepper, mixing well to coat the chicken evenly.
  3. Add the zucchini, bell pepper, red onion, and cherry tomatoes to the bowl, tossing to mix with the chicken and seasonings.
  4. Transfer the chicken and vegetables to a baking dish, spreading them out evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
