Ingredients
- Roasted chestnuts - 200 grams
- Almond flour - 100 grams
- Eggs - 2 large
- Coconut milk - 60 ml
- Honey - 1 tablespoon
- Cinnamon - 1 teaspoon
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Coconut oil - for frying
Steps
- Preheat your oven to 180°C (350°F) and place the roasted chestnuts in a bowl. Mash them lightly with a fork, leaving some chunks for texture.
- In a separate bowl, combine almond flour, baking powder, cinnamon, and salt. Mix well.
- In another bowl, whisk together the eggs, coconut milk, and honey until smooth.
- Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the mashed chestnuts.
- Heat coconut oil in a skillet over medium heat. Once hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon.
- Cook each fritter for about 3-4 minutes on each side or until golden brown and cooked through. Adjust the heat as necessary to avoid burning.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm.
