Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Quinoa - 100 grams, rinsed
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper until well coated.
  3. Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 25-30 minutes, or until tender and golden brown, stirring halfway through.
  4. While the cauliflower is roasting, cook the quinoa according to package instructions, usually by combining 100 grams of quinoa with 200 ml of water in a saucepan, bringing it to a boil, then reducing to a simmer and covering for about 15 minutes until the water is absorbed.
  5. Once the quinoa is cooked, fluff it with a fork and let it cool slightly.
  6. In a large mixing bowl, combine the roasted cauliflower, cooked quinoa, halved cherry tomatoes, chopped parsley, remaining 1 tablespoon of olive oil, and lemon juice. Toss gently to combine.
  7. If using, sprinkle the crumbled feta cheese on top before serving.
  8. Serve warm or at room temperature.
