- Garlic - 1 clove
- Tahini - 2 tablespoons
- Lemon juice - 2 tablespoons
- Cumin - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 1/2 cup (cooked or canned)
- Water - 2 tablespoons
Steps
- Preheat your oven to 200°C (400°F).
- Peel and chop the carrots into 1-inch pieces and place them on a baking sheet.
- Drizzle the carrots with olive oil and sprinkle with salt and pepper, then toss to coat.
- Roast the carrots in the preheated oven for 25 minutes, or until they are tender and slightly caramelized.
- While the carrots are roasting, peel and chop the garlic clove.
- In a food processor, combine the roasted carrots, garlic, tahini, lemon juice, cumin, salt, black pepper, chickpeas, and water.
- Blend until smooth and creamy, scraping down the sides as necessary.
