Ingredients

  • Carrots - 300 grams
  • Quinoa - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and slice the carrots into thin sticks or rounds.
  3. In a bowl, toss the carrots with 1 tablespoon of olive oil, salt, and black pepper.
  4. Spread the carrots on a baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
  5. While the carrots are roasting, rinse the quinoa under cold water.
  6. In a saucepan, combine the quinoa with 200 ml of water and bring to a boil.
  7. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
  8. Remove the quinoa from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
  9. In a large bowl, combine the roasted carrots, cooked quinoa, minced garlic, lemon juice, and chopped parsley.
  10. Toss everything together gently and top with crumbled feta cheese if using.
  11. Serve warm or at room temperature.
