- Carrots - 300 grams
- Quinoa - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Fresh parsley - 2 tablespoons, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and slice the carrots into thin sticks or rounds.
- In a bowl, toss the carrots with 1 tablespoon of olive oil, salt, and black pepper.
- Spread the carrots on a baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.
- While the carrots are roasting, rinse the quinoa under cold water.
- In a saucepan, combine the quinoa with 200 ml of water and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
- Remove the quinoa from heat and let it sit, covered, for 5 minutes before fluffing with a fork.
- In a large bowl, combine the roasted carrots, cooked quinoa, minced garlic, lemon juice, and chopped parsley.
- Toss everything together gently and top with crumbled feta cheese if using.
- Serve warm or at room temperature.
