  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel the butternut squash, cut it in half lengthwise, and remove the seeds.
  3. Cut the squash into 2.5 cm cubes and place them in a large bowl.
  4. In a small bowl, whisk together the olive oil, maple syrup, cinnamon, salt, black pepper, and thyme.
  5. Pour the mixture over the cubed squash and toss until evenly coated.
  6. Spread the squash cubes in a single layer on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through.
