Ingredients

  • Beets - 2 medium (about 300g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 tablespoon (15ml)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the beets thoroughly and trim the tops and tails. Wrap each beet individually in aluminum foil.
  3. Place the wrapped beets on a baking sheet and roast in the preheated oven for 40-45 minutes, or until tender when pierced with a fork.
  4. Once roasted, let the beets cool for about 10 minutes, then unwrap and peel the skins off using your hands or a paper towel.
  5. Cut the peeled beets into wedges or slices and place them in a mixing bowl.
  6. In a small bowl, whisk together the olive oil, minced garlic, chopped thyme, salt, black pepper, and balsamic vinegar.
  7. Pour the dressing over the warm beet slices and gently toss to combine.
  8. Serve immediately as a warm side dish or let them cool and serve at room temperature.
