Ingredients

  • Beets - 2 medium (about 250g)
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Tahini - 2 tablespoons (30g)
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons (30ml)
  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1/2 teaspoon (3g)
  • Ground cumin - 1/2 teaspoon (1g)
  • Water - 2 tablespoons (30ml)
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the beets in aluminum foil and place them on a baking sheet. Roast in the oven for about 40-45 minutes, or until tender when pierced with a fork.
  3. Once the beets are cool enough to handle, peel off the skins and chop them into chunks.
  4. In a food processor, combine the roasted beets, chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and ground cumin.
  5. Blend until smooth, adding water as needed to achieve your desired consistency.
  6. Taste and adjust seasoning if necessary, adding more salt or lemon juice to your liking.
  7. Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with fresh parsley before serving.
