- Canned chickpeas - 1 cup (240g), drained and rinsed
- Tahini - 2 tablespoons (30g)
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons (30ml)
- Olive oil - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon (3g)
- Ground cumin - 1/2 teaspoon (1g)
- Water - 2 tablespoons (30ml)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wrap the beets in aluminum foil and place them on a baking sheet. Roast in the oven for about 40-45 minutes, or until tender when pierced with a fork.
- Once the beets are cool enough to handle, peel off the skins and chop them into chunks.
- In a food processor, combine the roasted beets, chickpeas, tahini, minced garlic, lemon juice, olive oil, salt, and ground cumin.
- Blend until smooth, adding water as needed to achieve your desired consistency.
- Taste and adjust seasoning if necessary, adding more salt or lemon juice to your liking.
- Transfer the hummus to a serving bowl, drizzle with olive oil, and garnish with fresh parsley before serving.
