Ingredients
- Beef roast (preferably sirloin or ribeye) - 500 grams
- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Fresh rosemary - 2 sprigs, chopped
- Fresh thyme - 2 sprigs, chopped
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Beef broth (gluten-free) - 250 ml
- Carrots - 2 medium, cut into chunks
- Potatoes - 2 medium, cut into quarters
- Onion - 1 medium, quartered
Steps
- Preheat your oven to 160°C (320°F).
- In a small bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.
- Rub the marinade all over the beef roast, ensuring it is well coated. Let it sit for about 30 minutes at room temperature.
- In a large oven-safe skillet, heat a little olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
- Remove the roast from the skillet and set aside. In the same skillet, add carrots, potatoes, and onion, and sauté for 5 minutes until slightly softened.
- Place the beef roast back in the skillet on top of the vegetables. Pour the beef broth around the roast.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 55-60°C (130-140°F) for medium rare.
- Once cooked, remove the roast from the oven and let it rest for 10 minutes before slicing. Serve with the roasted vegetables.
