Ingredients

  • Brown rice - 1 cup
  • Vegetable broth - 3 cups
  • Olive oil - 1 tablespoon
  • Onion, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Zucchini, diced - 1 small
  • Red bell pepper, diced - 1 small
  • Frozen peas - 1/2 cup
  • Parmesan cheese, grated - 1/4 cup
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, heat the vegetable broth over low heat and keep warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
  3. Stir in the diced carrot, zucchini, and red bell pepper. Cook for another 5 minutes until the vegetables are slightly tender.
  4. Add the brown rice to the skillet and stir to coat the rice with the oil and vegetable mixture, cooking for 2 minutes.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 25-30 minutes, or until the rice is creamy and al dente.
  6. When the rice is cooked, stir in the frozen peas, grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  7. Remove from heat and let it sit for 2 minutes before serving. Garnish with additional parsley if desired.
