- Brown rice - 1 cup
- Vegetable broth - 3 cups
- Olive oil - 1 tablespoon
- Onion, finely chopped - 1 small
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Zucchini, diced - 1 small
- Red bell pepper, diced - 1 small
- Frozen peas - 1/2 cup
- Parmesan cheese, grated - 1/4 cup
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, heat the vegetable broth over low heat and keep warm.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes.
- Stir in the diced carrot, zucchini, and red bell pepper. Cook for another 5 minutes until the vegetables are slightly tender.
- Add the brown rice to the skillet and stir to coat the rice with the oil and vegetable mixture, cooking for 2 minutes.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 25-30 minutes, or until the rice is creamy and al dente.
- When the rice is cooked, stir in the frozen peas, grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Remove from heat and let it sit for 2 minutes before serving. Garnish with additional parsley if desired.
